This microlot of 100% Caturra was grown by Luis Anibal Calderón at Finca Villa Betulia in Huila, Colombia.
A rare and exotic variety, this particular Caturra is a spontaneous and natural variation of Red Bourbon, scarcely seen and only actively cultivated by a handful of farmers. Don Luis has carefully isolated and contained this lot to preserve it’s unique flavour characteristics and benefit from its inherent resistance to leaf rust. Cherries are hand-picked, following a strict ripeness criteria. They are then exposed to a natural, dry fermentation process of 14 hours and then shade dried on raised beds to 10.5% moisture content.
We’ve tailored a light-medium roast profile to highlight it’s exotic fruity undertones, silky body and a long, sweet finish.
